Lazy Satay Sauce

4 ingredients.  It’s like the bare minimum you wear when going out — underwear, shirt, shorts, shoes.  You could accessorize, but you’re entirely appropriate as you are.

Ingredients

  • crunchy peanut butter – start with 1/2 cup
  • lime juice – 1 Tbsp at a time
  • soy sauce – 1 tsp at a time
  • chili powder – 1/4 tsp at a time
Start with the peanut butter, and add the other ingredients one part at a time.  You should be able to pick out all the flavors.  Add water if necessary to achieve that saucy consistency.

    This goes great w/ chicken (for non-veggies of course)! I did this for chicken:

    1.5-2 lbs chicken breasts/tenders (boneless)
    4 tbsp melted butter or vegetable oil
    1/4 cup Dijon mustard
    1 tsp salt
    1 tsp curry powder or chili powder
    1/2 cup honey

    Place butter or vegetable oil in a shallow baking pan. Add remaining ingredients and mix until all ingredients are indistinguishable. Roll chicken pieces in this mixture then arrange in a single layer in same pan. Bake at 375 degrees for 30 minutes. Baste chicken w/ sauce from pan using spoon or brush every 10 minutes.

    Super easy and works great w/ the satay sauce!
